A collection of root vegetables is growing in my refrigerator. This calls for immediate action!
Hooray for the library’s cookbook collection. Specifically, I made amazing root veggie chips from The Autoimmune Paleo Cookbook by Mickey Trescott.
But the real truth is I tend to buy odd things (i.e. too many vegetables) when I am tired. You know how some people say to never shop on an empty stomach? In my case, I should never shop unless I’ve had a a full eight hours the night before!
Here’s a peek at how I ended up with rutabagas, turnips, parsnips and more and what I did with them.
